Sautéed redfish topped with toasted almonds and lemon with grilled asparagus

 

Sauteed Redfish and Heart Healthy Diet4 4 oz. pieces of redfish

2 cups of wondra or all purpose flour

½ cup toasted sliced almonds

2 lemons, sliced

1 bunch or 20 asparagus stalks

Light olive oil

Salt and pepper

 

On a clean surface, lightly season redfish with salt and pepper.  Place seasoned side of fish in flour.  In a large sauté pan, cover bottom of pan with oil and heat to medium.  When hot, place floured side of fish in pan and allow to brown topside for 3 minutes, then flip for another 2 minutes.  Place of paper towels to drain off excess oil.  Toss asparagus in oil and light salt and pepper.  Cook on grill and continuously move around to color all sides.  Cook asparagus for approximately 2 ½ minutes.  Finish dish by evenly distributing fish and asparagus topping each piece of fish with almonds and a squeeze of lemon.
