Artichoke hearts in herb and lemon dressing

3 artichokes

1 tablespoon fresh thyme

1 tablespoon fresh basil

4 tablespoon lemon juice

1 tablespoon honey

1 tablespoon Dijon mustard

6 tablespoons olive oil

Bring a large pot to a boil and lightly season. With a sharp knife, cut off stem and half of the top of the artichoke.  Boil for 8-10 minutes and check doneness.  Leaves should fall easily off artichoke.  Once done submerge in ice water to stop cooking.   Once cool, peel leaves away and inside of the heart.  Cut artichoke heart  in to ½ inch slices.

For dressing, mix everything thing in a bowl and toss artichokes in.
